Ingredients

Pesto Sauce Ingredients

  • ¼ cup fresh Basil
  • 1 Tbsp Almonds
  • 1 Tbsp Parmesan cheese
  • 2 Garlic cloves
  • 2 Tbsp Olive Oil
  • Salt and black pepper

Ingredients For Salmon:

  • 170g Salmon fillet
  • Salt and black pepper
  • ⅛ tsp dried Thyme
  • ⅛ tsp dried Rosemary

Instructions

    Pesto Sauce Instructions

    1. Add all the ingredients in the food processor.
    2. Pulse on high until everything is coarsely chopped, about 1 minute.
    3. Set aside.

    Pan Fried Salmon Instructions

    1. Season the salmon fillet with all the spices and herbs.
    2. Heat a non-stick pan and add olive oil.
    3. Add the salmon to the skillet, skin down first. This can also be done on your Barbecue hotplate.
      Cook for a few minutes.
    4. Flip the salmon carefully and continue cooking until thoroughly cooked.
    5. Serve with a slice of lemon.

    Oven Baked Salmon Instructions

    1. Preheat the oven to 400*F.
    2. Season the salmon fillet with all the spices and herbs.
    3. Arrange the salmon fillet in a baking dish or baking sheet with the skin side down.
    4. Rub one tablespoon of pesto over the top of each salmon fillet. Squeeze the lemon juice over pesto. Sprinkle the salmon with salt.
    5. Transfer salmon to preheated oven and bake for 10 minutes.
    6. Turn the oven to grill/broil and grill/broil the salmon for 5-8 minutes until salmon is done and pesto is lightly browned.
    7. Serve with a slice of lemon.
