  • ½ cup of chopped spinach
  • ¼ tsp of nutmeg powder

  • Preheat oven to 200℃/400℉.
  • Line a muffin tin with paper liners or use non-stick cooking spray.
  • Beat 2 eggs, ¼ tsp of nutmeg powder, a pinch of Salt, and a pinch of pepper in a bowl.
  • Fold in ⅓ cup of grated mozzarella and ½ cup of chopped spinach.
