For Crustless Mini Spinach Quiche

  • 2 Eggs
  • ⅓ cup grated/shredded Mozzarella
  • ½ cup chopped Spinach
  • ¼ tsp Nutmeg Powder
  • Pinch of Salt and Pepper

Tomato, Bacon, and Cheddar Cheese Mini Quiche

  • 2 Eggs
  • ¼ cup of chopped cherry tomatoes.
  • ⅓ cup grated/shredded tasty cheddar cheese
  • ¼ cup of diced, cooked bacon
  • Pinch of Salt and Pepper

For Ham and Cheese Egg Bites

  • 2 Eggs
  • ⅓ cup grated/shredded tasty cheddar cheese
  • ½ cup diced leg ham
  • ¼ tsp Onion Powder
  • Pinch of Salt and Pepper

Kale and Mushroom Egg Bites

  • 2 Eggs
  • ⅓ cup raw chopped up kale
  • ½ cup raw diced button mushrooms
  • ¼ tsp Garlic Powder
  • Pinch of Salt and Pepper

Instructions

  1. Preheat oven to 200℃/400℉.
  2. Line a muffin tin with paper liners or use non-stick cooking spray.
  3. Beat eggs, seasoning powders, salt, and pepper in a bowl.
  4. Fold in remaining ingredients.
  5. Pour the mixture into muffin cups/muffin tins
  6. Bake for 12-15 minutes.
