This cashew crusted chicken is simple yet exquisite and is a favourite in our house.
With a hint of honey that will have your taste buds questioning what that extra special ingredient is.


  • 6 skinless chicken breast fillets
  • ¾ cup flour
  • 1 tsp salt
  • ½ tsp black ground pepper
  • 1 egg
  • 2 Tbsp dijon mustard
  • 1 Tbsp honey
  • ½ cup panko bread crumbs
  • 2 cups chopped cashews


  1. Preheat oven to 150℃/300℉
  2. Cut chicken fillets into strips or whatever size you like.
  3. Rinse chicken pieces and pat dry with paper towel.
  4. In small deep bowl add flour and salt and pepper. Lightly blend and set aside.
  5. In medium size deep bowl mix in cashews and panko bread crumbs. Set aside.
  6. In small bowl beat egg and add dijon mustard and honey. Mix well. Set aside.
  7. Coat chicken in flour mixture.
  8. Next, dip in egg mixture.
  9. Coat in cashew and panko mixture.
  10. Place on wire rack and bake for 20-30 minutes or until the chicken is no longer pink and the juices run clear.

  • Instead of fish and chips, have chicken and chips.
  • Serve with roasted veggies and a side of sweet potato fries.
