These asparagus roll ups are great for morning and afternoon teas, a snack, as an appetiser or a light lunch.
This asparagus rolls recipe has only 3 simple ingredients and adds a bit of vibrant green to the platter.

They are a favourite on our finger food catering menu.

Ingredients

  • 370 grams fresh Asparagus Spears
  • 10 slices wholemeal sandwich bread
  • 50 grams mayonnaise

Instructions

  1. If using fresh asparagus - Blanch the asparagus until it starts to soften, then cool.
    If using tinned asparagus - Drain extremely well, do not blanch.
  2. Remove the crusts from the bread then using a rolling pin lightly roll each slice to make it thinner.
  3. Spread a thin amount of mayonnaise evenly over each slice of bread.
  4. Lay an asparagus spear across each slice diagonally and roll bread from corner to corner.
  5. Place on a plate and seal with plastic wrap then chill in the fridge for 2-3 hours.

Notes

  1. The more fresh the bread is the better.
    Same goes for the asparagus.
  2. Before serving unwrap and arrange the pieces on a serving dish.

  1. Toasted Asparagus Rolls

    1. Cut roll-ups in half and place seam side down on a greased baking sheet.
    2. Spray with olive oil and sprinkle with Parmesan cheese.
    3. Bake at 200℃/400°F for 10-12 minutes or until lightly browned.
  2. Asparagus Rolls with Cream-Cheese

    Use cream-cheese instead of mayo.
    Maybe blend a bit of salt and cracked pepper through it.

  3. Asparagus Roll Ups with Blue Cheese

    Mix 2 Tbsp crumbled blue cheese through the mayo.
    Maybe add 2 tsp chopped fresh chives through it as well.

  4. Asparagus Roll Ups with Prosciutto

    1. Wrap a slice of prosciutto around each asparagus spear.
    2. Cut roll-ups in half and place seam side down on a greased baking sheet.
    3. Spray with olive oil and sprinkle with Parmesan cheese.
    4. Bake at 200℃/400°F for 10-12 minutes or until lightly browned.
  5. Asparagus Roll Ups with White Bread


    Use white bread or a small tortilla wrap as an alternative to wholemeal bread.

  6. Asparagus Tempura Roll

    If you love asparagus, you will definitely love these asparagus sushi tempura rolls.
    This asparagus tempura recipe is worth it!

    Asparagus tempura roll ingredients

    • 1½ cups (375 ml) cooked sushi rice
    • 2 sheets seaweed nori
    • 12 sticks Asparagus Spears
    • 2 tablespoons (30 ml) store-bought fried tempura
    • 6 thin slices avocado
    • 2 tablespoons (30 ml) black or white sesame seeds

    Asparagus tempura roll instructions

    1. Blanch your asparagus spears, then cut into 2-cm (¾-inch) lengths.
      Set aside.
    2. Cut a 2-cm (¾-inch) strip off the largest side of the seaweed sheet to shorten it slightly.
    3. On each sheet, spread about 125 ml (½ cup) of rice on the matte side of the nori, up to 2-cm (¾-inch) from one edge of the narrow side, working with moistened fingers.
      Lightly moisten benchtop then flip sheets, rice side down.
    4. For the first roll, spread julienned cucumber on the top third of the nori.
    5. Roll, starting with the rice-less side of the roll.
      Compress roll with a bamboo mat, applying uniform pressure.
      Sprinkle with fried tempura.
    6. Dip the tip of a knife in water and cut roll into ten pieces.
    7. Place on a serving plate.
    8. For the second roll, work again with rice side down.
      Place avocado pieces on the upper third of the nori sheet.
    9. Start rolling with the rice-less side first. Compress roll with a bamboo mat, applying uniform pressure. Sprinkle with tempura.
    10. Dip the tip of a knife in water and cut roll into ten pieces. Place next to the asparagus rolls.
    11. Serve asparagus tempura rolls with soy sauce or Japanese mayonnaise, and wasabi.
  7. Asparagus Ham Rolls

    These Asparagus ham rolls are a great finger food, appetiser or side dish.
    They are delicious served fresh or oven baked.

    Asparagus ham roll ingredients

    • 12 Slices deli smoked ham
    • Low-fat cream cheese
    • 12 - 24 Asparagus Spears
    • ground black pepper, to taste

    Directions For Fresh Asparagus Ham Rolls

    1. Blanch asparagus spears. Set aside.
    2. Flatten and dry the ham slices.
    3. Stack ham in piles of 2 slices each; spread each stack with 1 tsp of cream cheese.
    4. Sprinkle with freshly ground black pepper.
    5. Place 1 - 2 asparagus spears on one of the long sides of each ham stack; roll up.

    Directions For Baked Asparagus Ham Rolls

    1. Preheat oven to 350°F.
    2. Flatten and dry the ham slices.
    3. Stack ham in piles of 2 slices each; spread each stack with 1 tsp of cream cheese.
    4. Sprinkle with freshly ground black pepper.
    5. Place 1 - 2 asparagus spears on one of the long sides of each ham stack; roll up.
    6. Place in 13x9-inch baking dish.
    7. Bake for 15 to 20 minutes or until heated through.
    8. NOTE: You can make this ahead, just assemble as directed, cover tightly with plastic wrap and foil.
      Refrigerate overnight or until ready to use.
      Uncover and bake as directed.
