Ingredients
  

For the biscuit base:

  • 250 grams 9 ounces Tim Tam biscuits, crushed
  • ¼ cup 60 grams unsalted butter, melted

For the cheesecake filling:

  • 750 grams 26 ounces cream cheese, softened
  • 1 cup 200 grams granulated sugar
  • ¼ cup 60 ml sour cream
  • 2 teaspoons vanilla extract
  • 3 eggs

For the chocolate ganache:

  • 1 cup 200 ml thickened (heavy) cream
  • ½ cup 100 grams dark chocolate chips

Instructions
 

  • Prepare the biscuit base:
    Preheat the oven to 175°C (350°F). Grease an 18x28cm (7x11-inch) baking pan.

    In a medium bowl, combine the crushed Tim Tam biscuits and melted butter.
    Mix until well combined and press firmly into the bottom of the prepared baking pan.
    Set aside.
  • Make the cheesecake filling:
    In a large bowl, beat the cream cheese and sugar together until light and fluffy.
