  • Measuring cups and spoons
  • Tongs

Ingredients

  • 4-6 fresh white fish fillets
  • juice of 1 lemon
  • ¼ cup of chopped fresh parsley
  • ¼ cup of chopped fresh dill
  • 4 Tbsp of olive oil
  • salt and freshly ground black pepper

Instructions

Marinate the fish:

  • In a large plastic or glass bowl, whisk together 4 Tbsp of olive oil, juice of 1 lemon, and most of the ¼ cup of chopped fresh parsley and ¼ cup of chopped fresh dill.
  • Season with salt and freshly ground black pepper.
  • Add the 4-6 fresh white fish fillets to the marinade and toss to coat.
  • Let the fish marinate for at least 15 minutes, or up to 30 minutes for extra flavor.

Prepare the grill:

  • Preheat your bbq grill or hotplate to medium-high heat.
  • Lightly oil the grates to prevent sticking.

Grill the fish:

  • Remove the fish fillets from the marinade and discard the marinade.
  • Place the fish fillets on the preheated grill.
  • Grill for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork.

Serve:

  • Transfer the grilled fish fillets to plates.
  • Garnish with remaining chopped herbs and lemon slices.
  • Serve with your favourite sides, such as baby potatoes and steamed vegetables.

Notes

Tips:
  • You can use a grill basket to make it easier to flip the fish fillets.
  • If you don't have fresh herbs, you can use 1 tablespoon of dried herbs.
  • Be careful not to overcook the fish, as it will become dry and tough.

Serving Suggestions:

  • Serve the fish fillets with lemon wedges and your favourite dipping sauce.
  • Serve the fish fillets over a bed of Rice or Quinoa.
  • Pair the fish fillets with roasted vegetables for a healthy and satisfying meal.
  • Use the fish fillets as a protein in a sandwich or wrap.
