Recipe For Cold Rice Salad
Turn plain rice into a delightful summer staple! This easy cold rice salad recipe is packed with fresh veggies and a flavourful dressing. Perfect for picnics, a side-dish, or a light lunch!

- Measuring cups and spoons

Ingredients
Rice Salad
- 2 cups cold water
- 1 cup rice white, long grain
- 1 red capsicum diced
- ½ cup ham diced
- ½ cup green peas
- ½ cup corn kernals
Dressing
- 3 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp lemon juice
- 1 tsp caster sugar
- 1 tsp black pepper ground
- 2 tsp fresh ginger grated
- 1 clove garlic minced
Instructions
- In a saucepan, add 1 cup rice to 2 cups cold water and bring to the boil.
- Lower heat and simmer, covered for 25 minutes.
- Remove from heat and stand, covered for 5 minutes.
- Mix together the 3 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp lemon juice, 1 tsp caster sugar, 1 tsp black pepper, 2 tsp fresh ginger and 1 clove garlic in a small bowl.
- Place the cooled rice along with the capsicum, ham, peas and corn into a large bowl.
- Drizzle the dressing on top, and toss everything together until well combined.

Recipe Variations
- Go for a brown Rice salad;
- If you would like to use a brown rice in this recipe, simply add an additional ½ a cup of water.
- Swap the protein;
- Substitute the ham for cooked and chopped streaky bacon, shredded chicken or tuna.
