Turn plain rice into a delightful summer staple! This easy cold rice salad recipe is packed with fresh veggies and a flavourful dressing. Perfect for picnics, a side-dish, or a light lunch!
In a saucepan, add 1 cup rice to 2 cups cold water and bring to the boil.
Lower heat and simmer, covered for 25 minutes.
Remove from heat and stand, covered for 5 minutes.
Mix together the 3 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp lemon juice, 1 tsp caster sugar, 1 tsp black pepper, 2 tsp fresh ginger and 1 clove garlic in a small bowl.
Place the cooled rice along with the capsicum, ham, peas and corn into a large bowl.
Drizzle the dressing on top, and toss everything together until well combined.
