- 50 grams Cucumber sliced into sticks⠀⠀⠀⠀⠀⠀⠀⠀⠀
- ¼ cup Black Olives pitted⠀⠀⠀⠀⠀⠀⠀⠀
- 15 grams Blue Cheese cut into cubes⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 100 grams Smoked Salmon 2.5cm (1 inch) slices⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the dressing:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 Tbsp Olive Oil
- ¼ tsp Dijon Mustard
- 1 tsp Lemon Juice
Instructions
For the salad:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Prepare the lunch box and all the salad ingredients.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Add 50 grams Cucumber first.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Add ¼ cup Black Olives.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Add 15 grams Blue Cheese.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Lastly, add 100 grams Smoked Salmon.
- Cover and make the dressing.⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the dressing:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Using a small bowl, add 2 Tbsp Olive Oil, ¼ tsp Dijon Mustard, and 1 tsp Lemon Juice.⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Whisk until well combined and creamy texture is reached.
- Drizzle over the salad.
