  • 125 g unsalted butter melted
  • ¼ cup 60g granulated sugar

  • ¼ cup 60ml lemon juice
  • 2 teaspoons vanilla extract
  • 2 cups 500ml thickened (whipping) cream, whipped stiff peaks
  • 2 feijoas diced

Instructions
 

  • Make the base: Combine the crushed biscuits, melted butter, and sugar in a bowl. Press the mixture evenly into the bottom and sides of a 23cm springform pan. Refrigerate for at least 30 minutes.
  • Make the filling: In a large bowl, cream together the cream cheese and sugar until light and fluffy. Beat in the lemon juice and vanilla extract until combined. Fold in the whipped cream until just combined.
  • Assemble the cheesecake: Pour the cream cheese mixture into the prepared crust. Gently swirl in the diced feijoas. Refrigerate for at least 4 hours, or until set.
