  • 300 g gluten-free self-raising flour blend see notes
  • 250 ml chilled sparkling lemonade
  • 125 ml thickened cream
  • Optional: 1/2 teaspoon vanilla extract


  • Preheat oven to 200°C (428°F).
    Line a baking tray with baking paper.
  • In a large bowl, whisk together flour and sparkling lemonade until just combined.
  • Gently fold in cream (and vanilla extract, if using) until a soft dough forms.
    Knead briefly (5-6 times) on a lightly floured surface until smooth.
  • Pat dough out to about 2cm thickness.
    Use a 6cm round cutter to stamp out scones, re-rolling scraps as needed.
  • Place scones on prepared tray and bake for 15-20 minutes, or until golden brown and firm to the touch.
  • Cool slightly on a wire rack, then devour warm with jam, honey, or whipped cream!
