  • 125ml thickened cream
  • Optional: 1/2 teaspoon vanilla extract


  1. Preheat oven to 200°C (428°F).
    Line a baking tray with baking paper.
  2. In a large bowl, whisk together flour and sparkling lemonade until just combined.
  3. Gently fold in cream (and vanilla extract, if using) until a soft dough forms.
    Knead briefly (5-6 times) on a lightly floured surface until smooth.
  4. Pat dough out to about 2cm thickness.
    Use a 6cm round cutter to stamp out scones, re-rolling scraps as needed.
  5. Place scones on prepared tray and bake for 15-20 minutes, or until golden brown and firm to the touch.
