Equipment

  • Fork
  • Sharp knife
  • Frying pan or skillet,

Ingredients
  

  • 1 cup plain flour all-purpose
  • ¼ tsp salt
  • ½ tsp cracked pepper
  • 1 egg
  • ¾ cup milk
  • 200 grams cooked and chopped corned beef leftovers or tinned
  • 2 Tbsp oil for shallow frying

Instructions
 

  • Mix 1 cup plain flour, ¼ tsp salt and ½ tsp cracked pepper together in a bowl.
  • Stir in 1 egg and gradually add ¾ cup milk until batter is smooth but not too stiff.
  • Stand mixture in the fridge for ½ hour.
  • While the corn meat fritter batter is cooling, Chop or shred the corned beef.
  • Add the 200 grams cooked and chopped corned beef to batter and mix well.
  • Heat Frypan on medium heat adding 2 Tbsp oil.
  • Spoon tablespoonfuls of mixture into fry pan and fry until golden on each side.

  1. For extra crispiness, make sure you chill the batter for 30 minutes before frying.
  2. Experiment with different seasonings, such as paprika or garlic powder, to add more flavour.
  3. Leftover fritters can be reheated in the oven or air fryer for a quick and easy snack.
  4. Adjust the amount of flour to achieve your desired texture, adding more for a firmer fritter or less for a softer one.
