Crank the temperature up to 220°C (425℉) and let it preheat while you prepare the dough.
Combine all the ingredients in a bowl:
Get your hands dirty and Knead the ¼ cup cheddar cheese,3 Tbsp almond flour, 1 egg yolk and 1 pinch of black pepper together until you have a smooth dough.
Prep your baking sheet:
Line it up with a sheet of baking paper for easy cleanup.
Roll out the dough:
Place the dough between two sheets of baking paper and flatten it out with a rolling pin.
Cut and poke:
Cut the dough into pieces perfect for serving and then use a fork to prick some holes on the top.
Bake it up:
Transfer the dough pieces to your prepared baking sheet and bake for 6-8 minutes.

Recipe Variations
Add a pinch of herbs (rosemary, chives, thyme, parsley are all great options). Just add to the batter
