Equipment

Ingredients
  

  • 370 grams fresh Asparagus Spears
  • 10 slices wholemeal sandwich bread
  • 50 grams mayonnaise

Instructions
 

  • If using fresh asparagus - Blanch the asparagus until it starts to soften, then cool.
  • If using tinned asparagus - Drain extremely well.
  • Optional - Remove the crusts from the bread then using a rolling pin lightly roll each slice to make it thinner.I was taught to do this, but actually prefer nice fluffy fresh bread.
  • Spread a thin amount of mayonnaise evenly over each slice of bread.
  • Lay an asparagus spear across each slice diagonally and roll bread from corner to corner.
  • Place on a plate and seal with plastic wrap then chill in the fridge for 2-3 hours.
  • Chill & Serve

  1. The more fresh the bread is the better.
    Same goes for the asparagus.
  2. Before serving unwrap and arrange the pieces on a serving dish.
