  • Preheat oven to 180°C (350°F).
  • Rinse the 2 kg corned beef silverside under cold water and pat dry.
  • In a mortar and pestle (or using a spice grinder), crush the 1 tsp black peppercorns.
  • Rub the 1 Tbsp olive oil and crushed peppercorns all over the silverside.
  • Place the 4 bay leaves in the bottom of the roasting pan and position the roasting rack on top.
  • Place the corned silverside on the rack, fat side up.
  • Pour the 500 ml beef broth into the bottom of the pan, ensuring it reaches about halfway up the sides of the meat.
  • Cover the pan tightly with aluminum foil.
  • Roast for 2 hours, then remove the foil and continue cooking for another 30-45 minutes, or until the internal temperature reaches 71°C (160°F) for medium-rare.
  • Remove from the oven and let the meat rest for at least 20 minutes before carving thinly against the grain.
