Make the crust: Combine 150 g crushed plain biscuits , 50 g melted butter , and 100 g white sugar in a bowl.
Press into the bottom of a springform pan.
Refrigerate for at least 30 minutes.
Make the filling: Peel and crush the 4 large kiwifruit .
Beat and whip the 60 ml thickend cream adding the 2 large eggs .
Beat the 300 g softened cream cheese , ¼ cup icing sugar , 1 tsp vanilla extract , and 1 tsp lemon juice until smooth.
Fold in whipped cream and crushed kiwifruit.
Pour the filling over the crust and smooth the top.
Make the glaze: Combine kiwifruit juice and icing sugar in a small saucepan.
Heat over low heat, stirring constantly, until the sugar dissolves.
Let cool slightly.
Pour the glaze over the top of the cheesecake and refrigerate for at least 4 hours, or overnight.
Decorate with fresh kiwifruit slices before serving.
