Ingredients
  

For the Biscuit Base:

  • 150 g crushed plain biscuits (Nice, plain wine or digestive biscuits)
  • 50 g melted butter

For the Cheesecake Filling:

  • 300 g softened cream cheese
  • 100 g white sugar
  • 1 tsp vanilla extract
  • 2 large eggs

For the Kiwi Topping:

  • 4 large kiwifruit
  • 60 ml thickend cream
  • ¼ cup icing sugar
  • 1 tsp lemon juice

Instructions
 

Make the crust:

  • Combine 150 g crushed plain biscuits, 50 g melted butter, and 100 g white sugar in a bowl.
  • Press into the bottom of a springform pan.
  • Refrigerate for at least 30 minutes.

Make the filling:

  • Peel and crush the 4 large kiwifruit.
  • Beat and whip the 60 ml thickend cream adding the 2 large eggs.
  • Beat the 300 g softened cream cheese, ¼ cup icing sugar, 1 tsp vanilla extract, and 1 tsp lemon juice until smooth.
  • Fold in whipped cream and crushed kiwifruit.
  • Pour the filling over the crust and smooth the top.

Make the glaze:

  • Combine kiwifruit juice and icing sugar in a small saucepan.
  • Heat over low heat, stirring constantly, until the sugar dissolves.
  • Let cool slightly.
  • Pour the glaze over the top of the cheesecake and refrigerate for at least 4 hours, or overnight.
  • Decorate with fresh kiwifruit slices before serving.

Notes

Tips:
  • Use full-fat cream cheese for the best results.
  • Make sure all your ingredients are at room temperature before starting.
  • Don't overmix the filling, or it will become runny.
  • If you don't have kiwifruit juice, you can use orange juice or pineapple juice instead.
