Meatball Sauce
Heat olive oil in a saucepan over medium heat.
1 Tbsp olive oil
When warm, add garlic and onion to the pan and gently Saute.
2 tsp minced garlic, 1 grated brown onion
When onion has started to turn transparent, add the passata, tomato paste and cinnamon.
700 grams tomato passata, 2 Tbsp tomato paste, 1 tsp cinnamon
Stir well then bring to the Boil.
Once boiling, reduce heat to low and allow to simmer for 15-20 minutes while you make the meatballs.
Meatballs
Dice spring onion
1 diced spring onion
Grate carrot and zuchini.
½ cup grated carrot, ½ cup grated zucchini
Place all meatballs ingredients except olive oil into a large bowl, juice lemon over top.
500 grams minced lamb, 2 tsp minced garlic, ¼ cup wholemeal breadcrumbs, 2 beaten eggs, 1 tsp ground cumin, 100 g crumbled feta cheese, ½ lemon juiced, 2 Tbsp coarsely chopped parsley
Mix everything until well combined.
