Ingredients
  

  • 400 g corned beef cooked and diced
  • 200 g cheese grated cheddar
  • 2 eggs
  • ½ cup milk 125ml
  • 1 cup self-raising flour 150g
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Vegetable oil for frying

Instructions
 

  • In a mixing bowl, combine the diced 400 g corned beefand grated 200 g cheese.
  • In a separate bowl, whisk together the 2 eggs and ½ cup milk.
  • Add the 1 cup self-raising flour, ¼ tsp salt, and ¼ tsp black pepper to the egg mixture and whisk until a smooth batter forms.
  • Fold the corned beef and cheese mixture into the batter until well combined.
  • Heat a generous amount of Vegetable oil in a frying pan over medium-high heat.
  • Scoop heaped tablespoons of the batter into the hot oil and fry for 2-3 minutes per side, or until golden brown.
  • Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  • Serve the corned beef and cheese fritters hot, garnished with your choice of toppings.
