Instructions
Make the crust: Combine crushed biscuits, melted butter, and sugar in a bowl. Press into the bottom of a springform pan. Refrigerate for at least 30 minutes.
Make the filling: Beat cream cheese, icing sugar, vanilla extract, and lemon juice until smooth. Fold in whipped cream and diced kiwifruit. Pour the filling over the crust and smooth the top.
Make the glaze: Combine kiwifruit juice and icing sugar in a small saucepan. Heat over low heat, stirring constantly, until the sugar dissolves. Let cool slightly.
