Ingredients
  

For the crust:

  • 150 g plain biscuits, crushed (Nice, plain wine or digestive biscuits)
  • 60 g unsalted butter melted
  • 2 tablespoons granulated sugar

For the filling:

  • 750 g cream cheese softened
  • 1 cup icing sugar
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • 1 cup heavy cream whipped to stiff peaks
  • 2 kiwifruit peeled and diced

For the glaze:

  • ¼ cup kiwifruit juice
  • 1 tablespoon icing sugar

Instructions
 

  • Make the crust: Combine crushed biscuits, melted butter, and sugar in a bowl. Press into the bottom of a springform pan. Refrigerate for at least 30 minutes.
  • Make the filling: Beat cream cheese, icing sugar, vanilla extract, and lemon juice until smooth. Fold in whipped cream and diced kiwifruit. Pour the filling over the crust and smooth the top.
  • Make the glaze: Combine kiwifruit juice and icing sugar in a small saucepan. Heat over low heat, stirring constantly, until the sugar dissolves. Let cool slightly. Pour the glaze over the top of the cheesecake and refrigerate for at least 4 hours, or overnight. Decorate with fresh kiwifruit slices before serving.

Notes

Tips:
  • Use full-fat cream cheese for the best results.
  • Make sure all your ingredients are at room temperature before starting.
  • Don't overmix the filling, or it will become runny.
  • If you don't have kiwifruit juice, you can use orange juice or pineapple juice instead.
